Bird's nest, or bird's nest (or more accurately, bird's nest made in a cave, Chinese: 燕窩), is the name of a famous food - medicine made from bird's nest. This is a delicacy of East Asian countries such as Japan, Korea, China, Vietnam, Malaysia, Indonesia and some other countries [1]. In Vietnam, bird's nest is classified as Bat Tran (eight delicacies). Bird's nest soup is known as "the caviar of the East". Bird's nest has been consumed by Chinese people since 400 years ago. Bird's nest soup looks like a knife glue cooked with spices and a little starch and sugar added. Bird's nest is one of the most expensive animal dishes, in Hong Kong the price of a bowl of bird's nest soup is about 60 USD.[2] Bird's nests are found on cliffs and caves where swiftlets live. The harvested bird's nests are white bird's nest Aerodramus fuciphagus (Hang's bird's nest) and black bird's nest Aerodramus maximus (Black's bird's nest), but only the bird's nest of Hang's bird's nest is known under the name Yen Dao in the market. Due to its dangerous nature and limited number of islands that can be exploited, this type of bird's nest often has the highest price compared to other types of bird's nest on the market. White nests and blood pink nests (blood nests) are said to be more nutritious and more valuable.
